“I’m not a big morning eater, especially when I’m rushing to practice or work, but I still need energy to start my day strong. Most mornings, I make a simple smoothie with fresh berries and a couple scoops of Happy Viking Strawberry—my favorite flavor. I like to take it easy in the morning and not eat too much. I think my eating habits have stayed with me since childhood. Growing up, my family didn’t eat big breakfasts, so my first real meal is usually lunch. Depending on my schedule, that could be chicken with sweet potatoes and rice or a sitdown meal at a restaurant if I’m traveling. When I get hungry in the middle of the day, I try and grab a healthy, delicious snack. When I’m in Florida, I love fresh oranges. On other days, I’ll reach for sliced fruit, flavored nuts, kale chips, or pickled vegetables—foods that give me energy and fill me up without slowing me down. Dinner is usually quick but tasty because I’m so tired at the end of the day that I don’t want to spend too much time in the kitchen! I often whip up lentils and add them to a big salad with quinoa or sautéed vegetables. If I want something heartier, I’ll cook a veggie burger (or sometimes a regular burger!) and throw whatever I have from the fridge on top such as lettuce or tomatoes, along with my two essential seasonings: pink sea salt and garlic powder. Before bed, I love having a Happy Viking Chocolate shake. It’s nutritious, satisfying, and tastes like dessert.”
